bread flour 280g

agave syrup 1tbsp
water 180g

knead dough well
1st rise 2 hours
punch down
2nd rise 3 hours
put the dough in a square pan
final rise 1.5 hours

Holeless Bagels

















Bagels with no holes for sandwiches.
tomato yeast ferment and easy laomien(chinese style ferment) are used in the dough.
Laomien is traditionally made with flour and water but this time I added a tiny bit of yeast.

Usually I add some sugar to the water when I boil bagel dough to make them shiny.

This time I did not add anythig to the water but still got shiny crust.

Farmer's Market: Ripe Tomato & Sweet Lemon yeast water

It's Wednesday, time to go get some fresh veges and fruits at farmer's market.

Sweet lemons, komatsuna, cilantro, ripe tomatoes and so on.




After I peeled tomatoes to make tomato sauce, I soaked skin in water to make tomato yeast water.

I also made sweet lemon yeast water with honey.

brown rice yeast water


What you need:

Organic brown rice
water
honey/sugar/agave

1. Germinate rice by soaking rice into water for about 3 days at room temperature.
(change water twice a day)

2. By using blender, crash the rice with water.

3. Put the rice water in a clean jar and add some sugar.

4. Let it sit for 4-7 days until it ferments.

You see tha end result in the picture. (right, front with a gold top)

corn meal bread : fruits yeast ferment


fruits yeast ferment (yeast water 60%:flour40%) 170g
cornmeal 100g
oat bran 100g
bread flour 150g
water 150g
salt 1.2tsp

Mix everything in a bowl.
Knead well and let the dough rise for 3hours.
Devide the dough into 8 and let them rise for 1.5 hours.
Bake at 380F oven for 16-19 minutes.

Milk Rye: Japanese natural yeast + Yeast


bread flour 200g
rye four 30g
salt 1tsp
yeast 1tsp
canola oil 1.5tbsp
milk 160g

Let bread maker knead and rise for 1hour & 10minutes.
Punch down and let it rise for 30 minutes.
devide into 8 balls.
Final rise for about 1 hour at 30℃ room.

bake for 15minutes at 375F

Assorted Yeast water jars...

The weather is beautiful here!
In Los Angeles, it is time to start making new yeast water!
If you are thinking about baking with natural yeast water, let's start it in spring.
It is the best season to start baking with yeast water.

To make strong yeast water, use a lot of fruits and be patient for few days.
Have fun!

35% Whole Wheat Sandwich Bread (Japanese natural yeast)



My favorite Japanese natural yeast was usen in this bread.
I baked 2 loaves from 400g white bread flour and 200g whole wheat flour.
Let the dough rise for 4 hours at toom temperature and let it rest in the refrigerator for 3-4 hours.
Devide the dough into 6 and take bench time for 1 hour at the room temperature.
Put 3 round doughs into each loaf pan and take the last rise until the top of the dough
exceeds the highest edge of the pan.
300F 10min
380F 15min
no steam

new apple yeast water


When I eat apples, I usually eat skin too but when I baked apple cup bread last week I had to peel the skin of some apples because of some customers' preferance.
So I decided to make a new jar of apple yeast water.
This time I used a jar full of skin and cores and fill it with water.
It started bubbling in 2 day and became really strong yeast water after 2 more days sitting on the kitchen counter.
Even though I did not feed any sugar or honey.
So if you are thinking about making yeast watet, use as much fruits as you can to fill the jar to get good result.
Weak yeast water does not give you good bread.

Prune Boule (apple yeast)


WW flour
white bread flour
prune
water used for reconstituting prune
canola oil
salt
apple yeast water preferment (ww flour and white flour)

The last rise was cut shot (supposed to have the 1.5hour rise but I could only spend 30 mintes)because of my busy weekend schedule and also had no time to bake for long time. So I only baked it for 15 minutes but I could obtain the good coupe.
I should have baked 10minutes longer to let the doug's moisture evaparate but I had no time.
Toasting the bread when you eat helps you doing that.

Strawberry Carob Bagels (soy yogurt yeast)

There are so many different kinds of sweet bagels in Japan but not here in the
